WINE IN THE ARAB DOMINATION
With the great Arab expansion of the seventh century AD C. wine production in the Mediterranean area underwent a significant downsizing. Did not disappear altogether, especially in Persia and Spain, the wine continued to be produced. In many European lands conquered by Arab dynasties lived Jews and Christians which was granted permission to produce wine for liturgical use and food processing but the true Islamic rule was derived from the change in the type of grapes grown. The vineyards were to be grown for table grapes, grapes are preferred to grains larger, more sweet and seedless. One type of grape that lacked acidity and giving unbalanced wines with a sugar content is too high.
